Most restaurants will not add a service charge, though most will add a small charge for pane e coperto bread and cover , and charges for bottled water are usual. Having said that, I am afraid that it does pay to be wary when eating in Ventimiglia.
A few restaurants do seem to take advantage of the fact that they can provide a poor deal to the many one-time day visitors who they will never see again. On a normal day, it may be best to choose a restaurant which has plenty of Italian rather than French customers.
And on market day, it may be best to book a table in advance at one of the more upmarket places, or to eat one of the excellent and good value panini which are available from a number of specialist cafes.
